Would it be possible to use an intel laptop running Kali linux and then plug in an external NVIDIA GPU and use it for running bruteforces?

Possible? Yes.
Viable/worthwhile? Depends on your use case, but probably not.

It can be done, but your main problem is getting a suitable connection to the laptop.
You would probably need an express card to PCI-E adapter of some sort.

Quite likely to be limited to one PCI-E lane, but that is similar to a 1x PCI-E extender
in a desktop machine. May not be an issue for mask brute force, but you may
bottleneck if trying to feed raw wordlists to the GPU.

All really needs to be setup with a cheap card before investing in anything top end,
because you really have to be sure this PCI-E connection to the laptop is working OK first.
Not a problem if you already have the GPU lying around!

You will need another power supply able to run the graphics card, of course.

Most people have done this DIY. The commercial solutions are a bit overpriced.
Just search for external GPU on laptop to find more.

You might be better off asking on the Hashcat forums if you really want to persue
this, as there may be more people there with some experience of doing something
similar?
